In a soup pot on low heat, warm the oil. Add the onions, cover and cook until they begin to soften, about 5 mins. Increase heat to medium-high, add the cabbage and cook, stirring constantly for 2 - 3 mins. Add the apples, wine, vinegar, thyme, salt, pepper and raisins and stir until the liquid begins to simer. Lower the heat, cover and simmer gently, stirring every 10 mins or so until the cabbage is soft, about an hour.

Serve hot or at room temp.

Notes

Variations: Substitute red wine vinegar for balsamic.

For a sweeter dish, add 2 more tbsps of raisins.

Add 1 tsp rubbed sage.
